Fresh ingredients make Napoli special

Scott Chervitz may not be from Italy, but he knows how to make an Italian-style pizza.

Chervitz runs Napoli Pizza in St. Peters, which he owns in partnership with his parents, Jerry and Karen, his brother Chuck and sister-in-law Pam. They purchased the pizzeria four years ago.

"The original owner (Frank Orlando) was from Naples," Chervitz said. "He opened the restaurant in Florissant in the early '70s and, like most businesses, followed his customers down here eight or nine years ago."This is Chervitz's first time owning a restaurant, although he spent seven previous years running various pizza chains.

"We were real successful at Imo's, so the family decided to be successful for us this time," he said.

Fresh ingredients are key to the pizzeria's success. Dough is made fresh by hand, as are the house salad dressing, pasta sauce, Alfredo sauce, lasagna and more.

"We make just about everything ourselves," Chervitz said. "Dad makes the meatballs, mom makes the salad dressing and minestrone."

The menu features appetizers, salads, pastas, pizzas, sandwiches, stromboli, calzone, low-carb bowls and desserts. Prices range from $2 (garlic bread) to $9 (Four Cheese or Meat Lasagna, Chicken Parmigiano). There is a children's menu.

Sandwiches include the Napoli Special (ham, salami, mozzarella, lettuce, tomato, pickle and Italian dressing for $6). The House Salad is made of iceberg and romaine lettuce, mozzarella, artichokes, red onion, diced red pepper, tomatoes, pepperoncinis and House Anchovy Italian dressing for $4.50.

Pizza is available in four sizes - 10-inch, 12-inch, 14-inch and 24-inch. Prices are (one topping) $7.50, $10, $12 and $29.99. Crust is available as thick crust, hand-tossed and St. Louis-style thin-and-crispy.

"We have 40 pizza toppings and 20 specialty pizzas," Chervitz said.

Popular specialty pizzas include the Napoli Special (sausage, mushroom, onion, green pepper, pepperoni and ham), Four Meat (sausage, pepperoni, Canadian bacon and bacon) and Classic Napoli (olive oil, garlic, Parmesan, basil and "classic" pizza sauce).

Napoli Pizza has seating for 40 and offers carryout and delivery. There are daily specials and lunch specials from 11 a.m. to 2 p.m.
